[Property]:
It is dark red violet powder or liquid, tasteless with no moisture absorption. It is in bright mauve with good stability within PH2.5-8 and will not fade after heated to 100°C with good light resistance. It is not stable for ion and stannum ion with good stainability for protein and carbohydrate.
[Processing]:
It is made from hydrolysate of Geniposide extracted from gardenia fruit by means of warm water adding amino acid, with the action of ?- galactosidase and prepared into powder finished products after refining.
[Uses]:
It is used in coloring of common foods such as flour, cookie, beverage and liquids, etc.
[Referent dosage]:
It is generally 0.2‰-2‰.
